Recently I love baking with apples the last month. The following two recipes are my favorite. They have a very fall/Thanksgiving feel to them but so does the weather around here so it works just fine.

APPLE + SMOKED MOZARELLA MINI CALZONES // Makes 12
I have included a link to the whole wheat dough I like, but you can buy one from a local pizza place or at some grocery stores to save yourself time.
1 Whole Wheat Pizza Crust (see recipe here)
1 Yellow Onion, sliced thin
1/2 tbsp. Butter
1 Medium Apple (Honeycrisp, Fuji or anything crispy)
1 Cup Diced Smoked Mozarella Cheese
1 Cup Shredded Parmesan Cheese
Handful of Fresh Thyme
Handful of Fresh Chives
Extra Virgin Olive Oil for brushing
Dijon Mustard to Serve
Honey Butternut Squash with Apples and Pecans
1 lb Butternut Squash
1 Medium apple – cored and cubed
3 Tbsp butter (I don’t generally use this much)
3 Tbsp Honey
1 Tbsp Brown sugar
1/4 Cup pecans (I always use more)
1/2 tsp Cinnamon, nutmeg or allspice. Whatever you have.
Bake butternut squash on 400F for about 20 min or until crisp and golden. Then toss with remaining ingredient and place bake no baking dish. Bake for 10 min on 350F.
